Tonight I was looking for a quick way to liven up some Costco chicken that we got a couple of days ago. Since we just moved in last week I'm still working on putting together a complete pantry of ingredients. It took me a week to get satisfactory salt and pepper grinders so I'm still not quite up to par.
I did a Google search on quick sauces for chicken and came up with a lot of lists of easy ideas. Unfortunately, they all required ingredients that are not "staples" like basil, lemons, and cream. Recipes with wine were not helpful because they don't sell alcohol in the grocery store here so I haven't gotten any, yet. BBQ sauce was discarded because of cooking time. The Food Network had a recipe for chicken with apples, onions and cider vinegar that looked doable, fast, and tasty.
However, I realized that halfway through cutting my apple that I only had balsamic vinegar and the recipe calls for apple cider vinegar. I found out that in a recipe like this, balsamic works just fine. Butter also makes a great substitute for oil and tastes better, too!
All the measurements are approximate. Don't worry if you don't use the exact amount.
Apples and Onions with Balsamic Vinegar.
Feeds 2-3.
1 Tablespoon butter
1 large apple cut into squares. Leave the skins on b/c its easier, peel the apple if really dislike skins.
1/2 large red onion, diced
2-3 Tablespoons of balsamic vinegar
1/2-3/4 cup chicken broth/soup
Freshly ground black pepper and Salt to taste
Directions:
-Melt the butter a saucepan and add the apples and the onions.
-Cook until the onions are starting to get limp(very apt description from FN)
-Add the Balsamic Vinegar to the mix and cook it down until vinegar starts to turn syrupy.
-Add the chicken stock/soup, pepper and salt to taste and let simmer until the liquid is absorbed/boils off. Or until your desired amount of liquid.
-Put on top of meat or serve as a side. Would work well with chicken or pork.
